:) Okey dokey it is ~HOT~ and you have finnished your chores and it's time for lunch, what ya havin ;) ??????
Summertime lunch and you know the average lunch not special occasion food.
Down here it is hot and humid and when everything is done, the house is straight and the sidewalk swept and the flowers watered I love to have a homemade pimento and cheese sandwich, a glass of iced tea and some cantaloupe.
Pimento and cheese
I block of SHARP cheese, finely grated
I small jar of pimento, do not drain :DIt is so good!!!!!!!!
I dash of garlic powder

OKEYDOKEY it's COLD! Just went to the store to buy some more Progresso Soup. I'm trying to finish up my indoor projects ~ sewing some curtains, cleaning the basement ~ 'cause sooner or later we WILL get summer.:rolleyes:

cheese and tomato sandwich with toasted bread. I guess I really don't have a fave summer lunch. **; If you don't have to heat anything up I'm all for it. If it involves sticking my head in a freezer all the better. :()

I don't get it????I can't believe that it is still cold there. It is June for crying out loud. It did not do this last year did it? No, I would have remembered you saying it was cold in....*L* June .
Maybe you can have some chili. If we ate chili in the summer here we would be dead in minutes..LOL

It was just like this last year, but it's very unusual. And crummy, to say the least. Tomorrow it's supposed to be sunny and in the 70's. So summer lunches... Steak salad with cilantro... Not that I ever take care of myself that well. Standard fare is a handful of Triskets and a diet Pepsi.

Freezing here too! I have been chilled since Sunday~~ I can't seem to get warm. We DID have chili last night! I was excited to turn on the over to make corn bread.... I'm thinking of baking something tonite too... I simply cannot turn on the furnace again, it's almost the middle of june for crying out loud!!!
I did hear better weather friday and the weekend...let's hope so...this is getting old!!!!
regular summer food? hmmmmmmmmm, anything on the bbq!!! I make extra the night before for lunch the next day~~ Has to be quick because I'm usually up to my eyeballs in paint!!!!! Oh 2 more days and counting till I start my summer break~~~~~:D

tomato, cucumber, and avocado salad with white balsamic vinegar, olive oil, pepper, and sea salt. mmmm good.

Yummmm that sounds fresh and wonderful. I'm making that. Where do I get white balsamic?????
Tomorrow we are going to a farm close by and get fresh tomatoes and vegtables. The watermelons should be pretty close to being ready. About 3 miles away from there we are gonna pick blueberries but we have to wait till way after sunset. It is too darn hot to be out ther picking. Last year we tried to go in the morning but it got hot fast.
The wonderful thing about both of these places is that they are on the honor system. You leave your money in a can. Can you believe???:D
Your salad sounds wonderful. Now what do you have to drink with that???? Tea???:p

It is refreshing! You can find white balsamic vinegar in most grocery stores. I've only ever been able to find it in the small bottles (dark green). I can't quite remember the brand, but I can check when I get home tonight. It is actually the best salad dressing ever and so simple...
We usually have it at dinner, so beverage of choice would be wine or beer! For daytime, my favorite refreshing drink is seltzer water with lots of ice and either lemon or lime. Makes drinking water more fun!

It's cold here too and like Neverfinished I just refuse to turn on the furnace. Matter of fact my dh keeps turning it on (dogs shivering) and I keep going behind him and shutting it off. devious Doing the laundry and the dishes sure seems like a good thing though and heat up the house somewhat. Cornbread would be good! Hmmm might have to suggest that. :)

It's HOT here... yesterday we hit a record high of 105! Whew! Talk about sweaty. and then add a nice 30 mph hot wind and it's officially summer in Texas!!
My favorite summer lunch would have to be tuna salad sandwich, pickles on the side, any kind of cold fruit - strawberries, watermelon, cantelope - and either iced tea or a diet dr pepper. DH doesn't like tuna salad so I haven't made it since we've been married, but I've been thinking here lately that he's just going to have to put up with it because I miss those sandwiches!
we both love pimento cheese sandwiches, he had one today for lunch actually! We buy it in the store already made though.

My favorite summer lunch is salad~mixed lettuce, baby spinach, tomato, grated carrot, cucumber, and a little grated sharp cheddar with Ranch or Italian dressing. And with a big glass of tea, of course:)!

I think my summer food would have to be sun tea. Not sure why it is so much better but sun tea is the best.:) And lots and lots of tomatoes.

I love a big bowl of fresh fruit....strawberries, raspberries, bananas, apples, cantelope topped off with thick vanilla yogurt. It is so refreshing and light. Especially when it is so dang hot and humid here........ or a nice crisp green salad with some left over grilled chicken.

I think it might finally be summer here. I'm sporting a little sunburn from sitting on my friend's deck on Sunday.
I've been making fruit smoothies before dinner. I use fresh fruit and yogurt and a little orange juice. The kids love it and I'm thrilled they're getting full on fruit. They feel like they're getting dessert before dinner. It's a win-win! :D

Oh, I make those too, Lisa--they are sooooo good:)! My favorite is strawberry yogurt (Plain would be healthier, I know!) banana and OJ.
