When I think of homecooked meals I think of my mom's potato salad! It is perfect everytime!! I also love any pie or cake she bakes. Mom is really a great cook and I sure wish I lived closer to her so I could have some of her meals more often!

What are your favorites?

my mom makes amazing banana bread, zucchini bread, and pumpkin bread! I LOVE THEM ALL!! Her chicken spaghetti is also very delicious!

When I was growing up, my mom used to make the greatest chocolate pies. I need to remind her of that recipe! Unfortunately, she really hates to cook~so I'm pretty much a self-taught cook and baker.

I don't eat red meat anymore, but when I was growing up, there was nothing I liked better than my Mom's pot roast. Mmmmmm! Everyone who ever ate it said there was none that could compare. :)

Mom wasn't much of a cook, but I still rememebr my Grandma Mary's goulash. She passed away when I was almost 5, but I still remember it to this day so you know it was good!

I have such fond memories of food:

One of my grandma's would make the hottest and the best pickles ever. When I visited them, I got to drink soda and eat those pickles. I haven't had one in over 30 years, but my mouth is watering at the thought of them.

My other grandma made oatmeal cookies and bought peanuts for treats when we stayed at her house. I remember staying up late and watching Johnny Carson and eating snacks.

My grandparents (not sure if my g-ma or g-dad makes it) make an awesome cinnamon swirl pound cake!! There was always one already made when we'd come visit! The last time I was there they had just made a regular pound cake and it didn't have the cinnamon in it or the glaze on top... I was very disappointed, but I didn't say anything because they're both in their 80s, so it's a miracle they can still cook and bake at all!

My mother gave up cooking when I was about 12, so I learned early. We have days when we have what we call "comfort food" - had one last night - meatloaf, mashed potatoes and fresh green beans with lemon butter.

I spent summers with my paternal grandmother and aunt and have many fond memories about being around the table. Don't remember the food specifically but there were linens at every meal and china and silver and crystal at dinner. ALWAYS!!! And her linens went out to be done - so you'd climb into bed with the most wonderful sheets and pillow cases! I wish I could afford to send my bedding out!:D

My mother was such a good cook. Fortunately, I learned to make her pot roast and her chili. But she made a number of good things. I was thinking about her beef with barley soup the other day... I don't have the recipe for that, but it was amazing.

Hm.. hungry now. :)

My grandma made the best fried chicken and biscuits and gravy that I've ever eaten. I still have the skillet she used for the chicken, but I can't fry it to taste like hers!

My mom's apple pie is so good, I won't order it when we are out or buy one at the store because I know I'll be disappointed. She is the MASTER at making crust.

RoseMary - If only that skillet was magic, and could remember the secret of your Grandma's fried chicken! Do you have her recipe, but just can't get it to turn out the same, or are you (no pun intended) just "winging it" as far as her receipe goes?

Whidbey5 - I know what you mean about the "best" apple pie. My Godmother, Aunt Margie, made the best apple pie (my absolute favorite kind of pie), and I always compare all others to hers. It was quite high and the top crust was very lumpy looking, from the chunks of apple, underneath. One of my biggest pet peeves is when you get pie and it's practically like applesauce inside. Blecccch!

Chapter Two--she just used the standard dip the chicken in flour with salt and pepper recipe that my dad uses (his is pretty good--just not as good as hers!). And the skillet isn't cast iron, in fact it is just an old thin type metal--probably aluminum or tin! I think grandmas just had some sort of secret they didn't tell us about!!

My mom was a terrific cook -- after graduating college I worked in a group home and had to prepare some of the meals. I'd call Mom and she'd get me through step by step and did they think I was a great cook. Some of her specialties was sweet and sour green beans, mac n' cheese, peach cobbler, meat loaf -- can't remeber anything that wasn't good!

When I a little girl, I used to eat beef and my mom would make my favorite empanadas. Now I make them, but with Morningstar tofu meal starters instead and it's just as tasty :) My mom also made the BEST cheesecake, (you know with the Philly cream cheese), and with those mini chocolate chips. YUM. I would just hover around her in the kitchen doing my happy dance. I don't know how to make cheesecake, so I really miss my mom's.

RoseMary...I think that's the truth...OR it's just that our mothers/grandmothers had the magic touch! :)

SuzyQs...I think so many of the MorningStar Farms products are wonderful! Haven't tried the tofu meal starters, but I will! I just worry because Kellogg bought them out now, and a lot of my favorites have disappeared. I'm afraid their "big company" attitude will hurt what MorningStar intended to do. They had the BEST (and quickest) Nine Bean Loaf I've ever had!

Mom was one of 16 kids so my mom's recipes were based on my meme's tight budget.
1. Potato Salmon Pie with Tomato Onion sauce - basically a tortiere with salmon instead of ground beef. Sounds weird but everyone who tries it, loves it.
2. Muddy Sauce (said with a french accent) - when you can only afford cheap cuts of meat, and not much of it at that, you dress it up by making a gravy out of the pan drippings. Because there were so many in the family, in order to get enough gravy, you had to add so much flour/water mixture that the gravy was an off white muddy colour...muddy sauce.
3. Tuna casserole - everyone's mom has one. I love my mom's.

Handsdown...my mom's fried chicken...with rice and gravey, biscuits, collards, and potato salad!

But her chicken and pastry is the best ever also...and her Thanksgiving dinner...and lasagna...and pancakes...and scrambled eggs with rice...and tuna salad...

She's just the best cook...and mom!
