Merry Christmas everyone.:D It's Sunday night and I'm checking my menu for Christmas day and I was wondering what you decided to make.
I hope you all have a wonderful holiday with your families. Life is short, so have FUN. Remember all our things to be grateful for and everyone with little ones around, well, look out for Santa and give them all a kiss from me.
Here is the Mem's menu .. pepper jelly spinach salad, pork tenderloin, cajun rice dressing and roasted root veggies. A pinot nior and a cote du Rhone to drink Oh, and a pumpkin pie that has cream cheese and half and half in it and cherry pie. :p :p Remember how much weight I complain about??? What a joke.
I love you all and wish the best holiday ever and I will see you after Christmas to hear all about your holiday......MERRY CHRISTMAS girlies!!!:D :D :D

Today, I baked a turkey and made sausage cornbread dressing. We also had mashed potatoes, gravy, and peas. We drank our usual iced tea (what else?:D ) and I made a chocolate cream cheese pie for tonight. (I don't like to talk about weight gain, Memmey:p !)
Tomorrow, we are having baked ham, baked beans, and potato salad at the big family Christmas party. I'm making an almond cranberry cake to take to that.

Hmmmm, we could make a contest out of your statment, Mem! I really, really need to lose some weight~after New Years, of course:p !

I'm making roasted turkey, glazed carrots, fresh cranberries, string beans, mashed potatoes, dinner rolls...and then a veggie lasagna, salad and garlic bread for those of us who are vegetarians! It's like KIM'S DINER! :D
A little o' this and a little o' that.

We did our Christmas brunch this morning with traditional Breakfast Lasagna and an egg strada - and of course, Mimosas!!!
My hub and I will go to the movies this afternoon with friends - also a tradition then we'll come back to my daughter's and have dinner with same friends. Ham, green bean cassarole, red potatoes with onions, fruit salad, cranberries and rolls. My kids will all be off with other family (in-laws, ex's side of the family, etc.) but home around 9. Then we sit around and tell stories all night about "remember when". My hub heads back to Milwaukee tonight because he works tomorrow.
He won't come back until New Year's Eve day - which really is nice because it gives me time with my kids. This is the best part of the holiday!!!
Hope all of you have just as much fun with your families.

My husband's "birth" mom and her sister spent Christmas with us. They cooked a delicious meal while I set a beautiful table and dug thru the Christmas wrapping and toys.
We had prime rib, fresh fruit salad with homemade whipped cream, stuffing, green bean casserole, good bread and wine. It was such a treat to smell a mouth watering dinner in my kitchen and not lifting a finger to cook it. One of my favorite presents this year!

For Christmas Eve Dinner, I made baked ziti. I have done this two years in a row now. It is actually "quick and easy" if you have everything ready. Plus, it turns out to be red and green. I mix half whole wheat and half white penne noodles and cook them up. Then, one becomes the "green" pesto ziti with fresh red peppers lightly sauteed and mixed-in. The second becomes the "red" ziti. For both, you just make your sauce in advance or use your favorite kind in a jar. I have been very impressed with Prego's organic line. Add a dash of wine to the red. Then, the pesto ziti gets the fancy parmesean from the fancy store and the red gets the good old fashioned mozzarella from Wally-World. (The splurges balance themselves out this way. Plus, you have one "grown-up" dish and one "kid-friendly" dish ... and usually the kids want a little of the "green" on their plate.
I made some fabulous garlic toast with French Bread and fresh basil and olive oil and parmesean. Plus, I didn't have time to make a salad so I did a quick steamed veggie medley (it looked pretty) ... no one "really" wanted a veggie anyway.
Then, for desert, I literally thawed a Sara Lee "French-Whipped" Cheese Cake on a VERY pretty cake plate and heated a can of "Country" cherry pie filling and drizzled it on the top. Then, I let my guests put their own "cut and bake" cookies on the pan (from a selection) ... I let them add colored sprinkles, cinnamon, or whatever they wanted ... then, we put them on the Christmas plate "for Santa" while I showed ADULTS the 50th anniversary animated version of The Grinch and laid out all of my ornaments with hooks in them so I could "trim my tree" - - (I ran SO late this year I decided a clean bathroom was more important than a decorated tree; so, I just convinced my guests we would be having a tree trimming party inspired by the Horton family on Days of Our Lives ... hee-hee.)
Everyone came and went for church at their respective times. It was a LOVELY evening. I was also incredibly impressed with the Starbucks Decaf Coffee! My sister mailed me some and it worked very well for a dinner party. I would like to drink more coffee after dinner, but I only drink coffee first thing in the morning.
Okay, I am rambling, I am just in shock I pulled off a dinner shin-dig, decorated my little home, AND made it to two different sets of in-laws over the holidays. Whew!

There were four of us. We collaborated on a meal of roast turkey breast, dressing, mashed potatoes, broccoli-cauliflower-carrot mix, homemade dinner rolls, with apple and pumpkin pies for dessert. Leftovers are my favorite part--last night I mixed the leftover dressing, rolls, turkey, mashed potatoes and sauteed celery and carrots together with some broth and baked it. Yum.
My friend and I talked about cooking dinner next year. His mom is in her eighties, and her heart isn't in it any more. Maybe a nice gift would be to make the dinner (my heart--and stomach--ARE in it!) while Mom sits in her chair. I always feel funny about invading another woman's kitchen, but in this case, it might be appreciated.

Oh Deb, that sounds delicious. And Jen, I have been craving baked ziti for about 2 weeks now. Think I will make it this weekend while at my daughter's.
